Shole Zard Recipe

Ingredients

  1. Rice : 2 cups
  2. Sugar : 1 cup
  3. Water : 3 cups
  4. Butter : 100 gr
  5. Saffron : 1 teaspoon
  6. Cardamom and rosewater : to enough quantities

Instructions

  • First wash the rice. Pour the saucepan with water and put on heat. Then pour rice and continually stir to soften.
  • Then add butter, cardamom and saffron. When rice softens enough take it away from heat.
  • Now add rosewater to make it odorant and let to cool.
  • Then serve in bowl and decorate with cinnamon, almond, walnut and pistachio slices.
  • To get best color, never add saffron directly, but brew it then add to Shole zard. Pay attention to add saffron before adding sugar.
  • Otherwise rice grains aren’t colored uniform that is cause of sugar glair.
